Noah Schultz appeared in six games for the Pistol Shrimp during the 2022 season, striking out 37 batters with a 0.93 ERA. 

He was drafted 26th overall by the Chicago White Sox in the 1st round of the 2022 MLB Draft, becoming the first Pistol Shrimp 1st-round pick.

Schultz appeared in 10 games with the Single-A Kannapolis Cannon Ballers during the 2023 minor league season, throwing 27 innings with 38 strikeouts and a 1.33 ERA. In 2024, he first appeared for the High-A Winston-Salem Dash, throwing 27.1 innings in 7 games with a 3.95 ERA and 42 strikeouts.

He was promoted to the Double-A Birmingham Barons in late May 2024, posting a 1.48 ERA across 16 games and 61.0 innings with 73 strikeouts and just 17 walks. In 2025, Schultz began with Birmingham, throwing 56.2 innings in 12 games with a 3.34 ERA and 58 strikeouts.

Schultz was promoted to the Triple-A Kannapolis Charlotte Knights in June 2025, posting a 9.37 ERA across 5 games and 16.1 innings with 18 strikeouts. In 2026, he began with Charlotte, throwing 14.0 innings in 3 games with a 1.29 ERA and 19 strikeouts.

He was called up by the Chicago White Sox in April 2026 and made his Major League Debut on April 14th. He picked up his first career victory on April 19th against the Athletics, tossing 5 innings and allowing just 1 hit and 1 run while striking out 6.
